Mocktail: Peach Shrub
Hey, I’m trying to give you some mocktail ideas that aren’t repeating on the flavouring + soda + lime theme I’m so enamored of. So, here is a different, if slightly labour intensive, mocktail based around a peach shrub. A shrub, as it turns out, is just a mix of fruit, vinegar and sugar. Almost like a quick fruit chutney. But, you know, also something you would make a mocktail out of.
Ingredients
25ml peach shrub (chopped peaches, cider or white wine vinegar and sugar in equal quantities, mixed, left for a few days and strained.)
50ml apple juice
3 large sage leaves
pinch of freshly grated nutmeg
ice
Method
- In the bottom of a cocktail shaker, combine 2 of the sage leaves and the shrub and muddle to release the flavor of the sage.
- Fill the shaker halfway with ice and add the apple juice and nutmeg.
- Pour into a martini glass and garnish with the final sage leaf.
