Mocktail: Peach Shrub

Hey, I’m trying to give you some mocktail ideas that aren’t repeating on the flavouring + soda + lime theme I’m so enamored of. So, here is a different, if slightly labour intensive, mocktail based around a peach shrub. A shrub, as it turns out, is just a mix of fruit, vinegar and sugar. Almost like a quick fruit chutney. But, you know, also something you would make a mocktail out of.


25ml peach shrub  (chopped peaches, cider or white wine vinegar and sugar in equal quantities, mixed, left for a few days and strained.)
50ml apple juice
3 large sage leaves
pinch of freshly grated nutmeg


  1. In the bottom of a cocktail shaker, combine 2 of the sage leaves and the shrub and muddle to release the flavor of the sage.
  2. Fill the shaker halfway with ice and add the apple juice and nutmeg.
  3. Pour into a martini glass and garnish with the final sage leaf.
